Bruce Golden, Ph.D.

Prior to coming to Cal Poly Dr. Golden was the chief executive officer of a livestock and pet technology company he founded after a 19-year career on the faculty at Colorado State University where he was a full professor of animal breeding and genetics. Dr. Golden’s research and service to industry have resulted in numerous awards and publications including a series of patents related to animal identification and diagnostic instruments. While at Colorado State he was the founder of the Center for Genetic Evaluation of Livestock, the largest provider of genetic evaluations for breed organizations and breeding companies in North America. He has extensive international experience in livestock production including working in China, Brazil, Venezuela, New Zealand, the UK, Canada and Australia. Dr. Golden attended Washington State University in Pullman, WA, where he received both Bachelor of Science and Masters degrees in Animal Science. Dr. Golden received his Doctorate degree in Animal Breeding and Genetics from Colorado State University in Fort Collins, CO.

Leslie S. Ferreira, Ph.D.

Dr. Ferreira is a Cal Poly alumnus who taught vocational agriculture at a local junior high school prior to moving to Utah to teach and earn his doctorate.  His Cal Poly teaching includes courses in Dairy Management, Nutrition, Artificial Insemination, Cattle Evaluation, and Dairy Product Marketing (doing research in the latter area). Dr. Ferreira’s related professional interests are in dairy safety, reducing heat stress and increasing cow comfort. He has been a consultant for numerous companies and coordinates International Dairy Management Seminars which are held at Cal Poly. Specialties: Reproductive Physiology; Dairy Management; Dairy Safety.

Leanne M. Berning, Ph.D.

Dr. Berning teaches several courses, including Lactation Physiology and the general education course called General Dairy Husbandry. She advises the Los Lecheros Dairy Club, and is active as an advisor of the Student Affiliate of the American Dairy Science Association. Dr. Berning’s academic interests include mechanisms of disease resistance against mastitis, endocrine effects on the immune system and computer applications to dairy education. Specialties: Lactation Physiology; Milk Secretion.

Nana Y. Farkye, Ph.D.

Dr. Farkye teaches Physical and Chemical Properties of Milk and Milk Products. His current research interests include cheese technology and ripening, as well as dairy enzymology. Dr. Farkye’s achievements include two U.S. patents on the development of no-melt cheese. Specialties: Dairy Chemistry; Cheese Technology; Fermented Dairy Products. 

Stanley L. Henderson, Ph.D.

Dr. Henderson teaches Introduction to Dairy Technology, Dairy Genetics, Judging, Fitting and Showing. He has judged numerous dairy shows throughout the world. Dr. Henderson is the faculty supervisor of the Cal Poly Dairy Farm and coach of the Dairy Cattle Judging Team. Specialties: Genetics; Fitting/Showing/Judging; Herd Management. 

Edwin H. Jaster, Ph.D.

Dr. Jaster teaches Dairy Feeds/Feeding and Advanced Dairy Cattle Feeding. Dr. Jaster’s research projects include: 1) value of resistant protein for dairy cattle; 2) efficacy of various fat sources for lactating dairy cattle; and 3) utilization of forage fiber for lactating dairy cattle. His other professional interests include legume and grass silage production, and dairy calf nutrition and management. Dr. Jaster is an avid cyclist and enjoys fly fishing. Specialty: Animal Nutrition.

Rafael Jimenez-Flores, Ph.D.

Dr. Jimenez-Flores conducts scientific research in the area of Dairy Science applied to foods. His focus is on milk proteins, interactions of milk proteins with other components during processing, biotechnology, and dairy microbiology as it applies to dairy foods. Dr. Jimenez-Flores teaches Bioseparation Process in Dairy Products Technology, and Dairy Microbiology. He also teaches several short courses for the dairy industry. He has a great interest in advising and providing many opportunities for senior projects for students interested in the area of food and dairy food processing, food chemistry, food and dairy microbiology and with programs for graduate students pursuing their Masters degree at the Dairy Products Technology Center. Specialties: Biochemistry of Milk Proteins; Biotechnology in Foods; Dairy Microbiology; Molecular Biology. 

Phillip S. Tong, Ph.D.

Dr. Tong coordinates outreach activities for Cal Poly’s Dairy Products Technology Center (including working directly with industry on special project needs). He has taught courses in Milk Processing, Cheese Technology, Concentration Technologies, and a graduate course in Bioseparation Processes. Dr. Tong’s research interests include bioseparation processes, frozen dessert technology, dairy chemistry and technology, milk powder, and milkfat. In addition, he is co-organizer and serves as an instructor in the following industry short courses: Cheese Short Course, Milk Processing Technology Short Course, and Ice Cream Manufacturing Short Course. He has served on the Editorial Board of the Journal of Dairy Science, and Cultured Dairy Products Journal. He is an active member of the American Dairy Science Association, the International Dairy Federation, and the Institute of Food Technologists. Specialties: Dairy Foods Processing and Development, Separations Processes, Frozen Dessert Technology, Milk Processing and Cheese Technology.
